We grow several varieties of potatoes. Pontiac, Butterball, and Dakota Pearl.
Pontiac is a red skin, white fleshed variety that does really well in our clay soil. You can harvest these early for baby red potatoes, but if allowed to grow to maturity they are a large potato.
Butterball is a yellow skin, yellow fleshed variety that is a good all around potato and stores well.
Dakota Pearl is a pale skin, white fleshed variety that is great for storage. It makes good chips too.
They are ready after the first mild frost. They are harvested, washed, cured in the sun, then bagged.
