We grow Purple Royalty green beans. We also grow Provider, which is listed under Bean, Green. Purple Royalty is a green bean that is dark purple in color. They taste the same as a normal green bean, but have a color kids seem to enjoy. They are only purple when fresh, as soon as you cook them, they will turn green. So just wash them and let the kids dip in salad dressing for a healthy snack. Or let them watch the color change as they cook.
